250 g garrofó or dry white navy beans
500 g tavella or other young bean seeds
1 chicken, about 1.3 kg
1 rabbit, ready to cook
salt and pepper
4 tablespoons olive oil
24 snails, cleaned
1 kg ferraura or other green beans
250 g tomatoes, peeled and chopped
2 cloves garlic, minced
2 g saffron powder
750 g rice

Soak the white beans in water overnight and drain the next day. Wash the chicken and rabbit, pat dry and cut into small pieces. Season with salt and pepper.

Heat the olive oil in a paella pan, brown the chicken and rabbit over medium heat on all sides, then add the snails and brown shortly. Remove the meat and snails from the pan and set aside.

Add the green beans, tomatoes and garlic to the oil and brown. Add the white beans and 2 1/2 litres of water. Simmer for 10 minutes. Then add the saffron and rice and mix well. Cook for 10 minutes over high heat. Add the meat and snails and cook for another 10 minutes over low heat, until the water has evaporated. Continue cooking for a few more minutes, until the rice is forming a crust (socarrat) on the bottom of the pan./s.basel

Traditionally, the famous dish is prepared over open fire and eaten directly out of the paellera (paella pan) with a spoon. As the paella is quite rich, it is served for lunch at about 3 p.m. In order to successfully prepare the dry rice dish, you should use paella rice, ideally arroz bomba, which is grown in the vicinity of Valencia. Alternatively, parboiled rice is suitable as well, but not short grain rice.

The typical ingredients of Paella Valenciana are chicken and rabbit, snails occasionally, too. The rice is flavoured with saffron and coloured yellow. You add tomatoes, red peppers, green beans and garrafones (Spanish white beans). What is crucial is that the rice is „al dente“, the meat is done and the vegetables are crisp – thus the proficiency consists in adding the ingredients in the right moment. Fuentes del Algar

Located in the valley of Callosa d’en Sarrià, the springs of Río Algar are about three kilometres away from the town centre. Extending over 1.5 kilometres along the riverbed, the landscaped park has been a nature reserve since 2002. In a breathtaking scenery numerous small springs form crystal-clear, turquoise lakes and roaring waterfalls. Surrounded by oleander and fig trees, a loop road leads through the shady built, natural park. The cool floods invite adults as well as children to swim and splash, offering a welcome refreshment. However, due to the stony ground it is advisable to wear swim shoes.

The lovely mountainous region provides further attractions for excursionists: You can take a walk on the Avenida de las Plantas aromicas or explore one of many hiking trails and bridle paths. Tigernuts were introduced to Spain by the Moors in the 8th century – the idea to produce horchata de chufa comes from them. The beverage is prepared out of an extract which is gained from the roots of the tigernut plant: The tubers are washed, ground, soaked and pressed several times. By adding sugar and water, you then get the white, milky liquid. Tigernuts are rich in dietary fibres, vitamins, mineral nutrients, micronutrients and unsaturated fatty acids. Proteins and carbohydrates make them an optimal energy booster.

In horchaterías (milk bars, ice cream parlours) the natural refreshment is freshly prepared and served ice-cold. Often warm fartons, longish, yeast-risen pastries for dipping, are offered with it. Ciudad Quesada

Ciudad Quesada is a small, beautiful town in the Southern Costa Blanca close to the older town of Rojales. It has a quite remarkable history, for it was founded between 1972 and 1999 on a hillside by a man who realized his childhood dream, Justo Quesada Samper. He envisioned building his own city named after himself where people could enjoy life together in peace and harmony. The first inhabitants of Ciudad Quesada were from Switzerland, now people from twenty different nations live here year round which makes it a bustling town.

Living in this modern town offers many advantages. Due to the agreeable climate of the Costa Blanca the location is suitable for retirement as well as for holidays. In recent years much has been built in and around Ciudad Quesada. However, instead of becoming an over-developed resort it has retained its cozy character with white villas and houses. L'Oceanografic - Aquarium of Valencia

The Valencia Aquarium, called Oceanográfico, encompasses the largest marine park in Europe. About 45,000 examples of 500 marine species inhabit nine underwater towers. Like for instance sharks, Beluga whales, sea lions, and manta rays.

Located in the fascinating City of Arts and Sciences, the aquarium is part of a unique, avant-garde complex. You can also discover a planetarium, botanical garden, science museum, and opera house here. In the Wetlands area tropical mangrove swamps and Mediterranean marshlands are displayed – the marine areas show the habitats of species of the Mediterranean, the Arctic and the Antarctic, the islands, the tropical seas, the temperate seas and the Red Sea.
